Plan your New Year's Day meal of black-eyed peas with ham (tradition food for New Year's Day) and cabbage (something green representing money), plus the rest of the meal of yams and cornbread (to compliment the peas and cabbage and to complete the meal).
The Black-eyed Peas
1 lb. dry black-eyed peas
1 sweet yellow onion, diced
1- 2 cups of diced smoked ham
Optional: some fresh garlic if desired
1. Put the peas in a large cooking pot and add water or chicken broth to cover.
2. Put 3 to 5 tablespoons of oil into a skillet, add the diced onion, and the garlic if desired, and saute and add to the black-eyed peas.
3. Simmer 2 to 3 hours until peas are tender added more water or broth if needed. You do want the liquid to cook down, but you don't want to let the peas get too dry and burn. I prefer my black-eyed peas to have some liquid with them.
Cooking time can range from about 2 hours to 3 hours depending on altitude and if you are cooking them with a slow simmer or a hard simmer.
The Cornbread
Let's do this meal the easy way instead of standing in the kitchen all day long. Buy a box or two of cornbread. Mix according to the directions on the box. Bake and Set aside until the peas are done.
Now for the Green Stuff
While the black-eyed peas are simmering, cut a head of cabbage into wedges and put into a cooking pot. Cover with water and slow boil until the cabbage is tender. Drain, put back into the pot, add butter and let set until the peas are done.
The Yams
Again, do this the easy way. Buy 1 or 2 large cans of yams. Open the cans, drain the yams and put into a pot. Add some butter and just a bit of brown sugar. Just before serving the black-eyed peas, get the yams good and hot on the stove top, turn the burner on under the cabbage and heat it up. While these are heating, cut the corn bread into squares or pie shapes, arrange on a plate, spread butter over the top and heat in the microwave until the butter melts. Dish up the peas and enjoy your traditional home cooked New Year's Day meal.
