Chicken Enchilada Chili Recipe
My nephew sent me this recipe and insists that it is excellent. It's cooked in a crock pot, it makes a large amount at one time and the leftovers can be frozen for later meals. My nephew had a bag of **mixed dry beans that he used for this recipe.
1 1/2 cups prepared enchilada sauce
2 14.5 ounce cans tomatoes with seasoning of your choice
2 15 ounce cans pinto or kidney beans with juice (or 1 cup **dry pinto beans which have been soaked overnight)
2 celery stalks, chopped
1 onion, diced (or 1 tablespoon dried minced onion flakes)
1 to 2 teaspoons chili powder
1 teaspoon ground cumin
1 1/2 pounds chicken thighs, legs, or breasts)
Shredded cheddar cheese and sour cream for serving (optional)
1 teaspoon chili powder
EquipmentA 6-quart crock pot
Pour the enchilada sauce and tomatoes into a 6-quart crock pot or slow cooker. Add the beans, celery, onion, and spices, Stir. Then place the chicken pieces on top. Cover and cook on low for 7 to 8 hours, or until the flavors have combined. If you use dry beans, then you may need to cook longer to fully soften the beans. Fish out any chicken bones before serving. Serve with shredded cheddar cheese and a spoonful of sour cream, if desired.
You might also serve cornbread or Mexican cornbread with this recipe, or pass a bag of Fritos to munch with the Chicken Enchilada Chili.
**Raw kidney beans, and to a lesser extent some other beans (such as broad/fava beans), contain the toxin phytohaemagglutinin, which is destroyed by boiling for at least ten minutes, but not by the lower temperatures of a slow cooker, so dry beans must be boiled prior to slow cooking to avoid poisoning. Even a few beans can be toxic, and beans can be as much as five times more toxic if cooked at 175 °F (80 °C) than if eaten raw, so adequate pre-boiling is vital. Cases of poisoning by slow-cooked beans have been published in the UK; poisoning has occurred in the USA but has not been formally reported.
