    Quick Tamale Pie

    Chop an onion, then use prepared ingredients to quickly put this meal together and pop it into the oven.

    Ingredients

    1 medium onion (chopped
    1 can chili (no beans)
    1 can tamales
    2 to 3 cups lightly crushed ©Fritos
    1 1/2 to 2 cups grated sharp cheddar cheese

  • Preheat oven to 350 degrees.

  • Saute the chopped onion until done.

  • Combine the ingredients in layers in a 2 quart baking dish starting with the ©Fritos. Reserve about 1/4 of a cup of the ©Fritos to add to the top of the casserole.

  • Spoon the chili over the ©Fritos.

  • Take the wrapper off the tamales, put onto a plate or pan and use a fork to break the tamales into pieces. Then spoon the tamales over the chili.

  • Spoon the tamale juice over the tamales.

  • Scatter the onions over the tamales.

  • Put the rest of the crushed ©Fritos over the onions and other ingredients.

  • Place the grated cheddar cheese over the top of the casserole.

  • Bake at 350 degrees for about 15 minutes or until the tamale pie is hot and the cheese is melted.
  • Serve with a salad and desired beverage.

    Notes:

    1. If you don't have sharp cheddar cheese, then use mild cheddar cheese, longhorn cheese, or whatever you have on hand. If you use Swiss cheese, etc. it will change the taste a bit, but it will still be a good casserole.

    2. If you don't have an onion, then leave the onion out. Leaving out the onion will not spoil the taste of the tamale pie.

    3. If you have diced black olives you could add them to the tamale pie casserole.

    4. Want a bit of a bite to your food? Add some hot sauce or salsa to the casserole before popping it into the oven.

    Remember, cooking is Not rocket science, so you can experiment.
