Cabbage Relish

A relish recipe that shows you how to make Cabbage Relish, a cabbage based condiment that is can be served with ham, beef, turkey, or with beans and cornbread.

Supplies Needed

Ingredients

3 big onions (sliced)
1 medium cabbage (sliced or chopped)
2 green peppers (chopped)
1 red pepper (chopped)

Soak all night in water that has 1/2 cup salt added to it.
Next morning squeeze the water out of the onions, cabbage, and peppers that has soaked all night.

Put into a large kettle with:
2 1/2 cups sugar
3 cups vinegar
1 hot pepper (chopped)
A little cinnamon
A little mustard seed
A little allspice
Salt to taste

Boil real slow about 45 minutes.
Pack into sterilized jars and seal
