Green Chili Enchilada Casserole

Put together this quick and easy green chili enchilada casserole and pop in into the oven.

Ingredients

1 lb hamburger meat
1 package corn tortillas
12 oz. longhorn cheese (grated)
1 small can diced green chilies
1 can evaporated milk
1 can cream of mushroom or cream of chicken soup

Equipment

A glass baking pan approximately 9x12x2

Instructions

Pre-heat oven to 350 degrees.

Separate the hamburger meat into small chunks and brown in a skillet on the stove. You may want to add a small amount of salt and some pepper.

Tear the tortillas into pieces, about 5 to 8 pieces per tortilla and layer all the tortilla pieces on the bottom of the baking dish.

Spread the grated long horn cheese over the tortilla layers.

Pour any grease off the hamburger meat, then spread the hamburger meat over the tortilla and cheese layers.

Mix the soup, canned milk and green chillies together and pour over the cheese and tortillas.

Bake at 350 degrees for 30 minutes.

Serve with a salad for a quick and easy meal.

Note: Use less of the green chillies for a milder tasting casserole.
