Corn Bread Recipe

My southern corn bread recipe is quick, easy, and has a slightly sweet taste.

Ingredients:

  • 1 9 to 10 inch square pan
  • 2 boxes 8.5 oz Jiffy Corn Muffin Mix
  • 2 eggs
  • 2/3 cup of whole milk, 2% milk, or 1% milk
  • 1/4 cup sugar

    • 1. Preheat oven to 400 degrees.
    2. Grease sides and bottom of the pan using lots of butter or margarin.
    3. Mix the 2 boxes of Jiffy Corn Muffin Mix into a bowl with the eggs, milk, and sugar.
    4. Pour the mixture into the pan and bake for 20 to 25 minutes until the cornbread
    is nicely browned and a tooth pick poked into the center of the bread comes out clean.
    5. Let cool slightly. Cut into squares and serve warm with butter.

    Corn Bread Variations:
    1. Mix 1/2 to 1 small 4.5 oz can of chopped green chili peppers into the mixture before baking.
    2. Mix 1/4 to 1/2 cup of creamed corn into the corn bread mix before baking.
    3. Mix both the chopped green chili peppers and the creamed corn into the mix before baking.
