    Ham and Fruit Salad

    Judy's recipe for Ham and Fruit Salad is great as is, or in a lettuce leaf wrap, or served in a pita pocket.

    Incredients

    1 lb cooked, cubed ham (or buy a precooked and cubed package of ham from the deli department of your local store)
    3/4 cup of fat free sour cream
    1/4 cup mayonnaise (low fat mayonnaise may be used if desired)
    3 or 4 ribs of celery (chopped or sliced thin)
    1 can (20 oz.) pineapple cubes (drained)
    1 red apple of your choice (cut in small cubes or chunks)
    1/2 to 3/4 dried apricots (sliced into 4 to eight pieces or slices)
    1/3 cup of toasted walnuts or pecans
    1 teaspoon lemon juice

    Directions

  • Combine the sour cream and mayonnaise and place into a large bowl.

  • Cube the red apple and place in a small bowl. Add the lemon juice and toss to coat the apple pieces. Then put the apple chunks into the large bowl with the sour cream and mayonnaise.

  • Add the drained pineapples, the apricots slices, the celery, the cubed, cooked ham, and the toasted walnuts or pecans, and mix well.
  • Serving Suggestions:

    1. Place the salad on a small service plate and decorate with watercress. Serve with your favorite crackers.

    2. Put a couple of tablespoons of the salad mixture on a leaf of lettuce and roll up.

    3. Tear or chop iceberg lettuce or romaine lettuce into pieces or chop coarsely and add the salad mix to the lettuce. Serve in bowls as a salad to go with your main meal, or serve with your favorite crackers for a ladies luncheon.

    4. Stuff it into pita pockets along with a piece of lettuce and a thin slice of tomato or a spoonful of diced tomatoes, and serve with your favorite beverages at your ladies luncheons. We used Kangaroo Brand Hi Fiber Pocket Bread Flaz N' Grains by Kangaroo Bread.

    Alternate Recipe Suggestions:

  • Use cooked cubed chicken breasts instead of the ham cubes.
  • Use cubed turkey instead of the ham cubes.
  • Add 1/2 to 1 cup of craisens (dried cranberries) to the fruit mixture.
  • Add 1/2 cup of chopped dried dates to the fruit mixture.
  • Be Creative
    Remember, cooking is NOT aerospace engineering, so experiment!
