Chow Chow Relish RecipeMama's Chow Chow recipe shows you how to make a cabbage based relish that is delicious when served with a big pot of pinto beans and cornbread.
Supplies Needed
A boiling water or a pressure canner
A square of cheesecloth or cheesecloth bag
Sterilized jars, seals, and lids.Ingredients
4 quarts green tomatoes
1 large head of cabbage
9 medium onions
5 medium sweet green peppers
6 medium sweet red peppers
8 apples
1/2 cup pickling or canning salt
15 cups vinegar (white distilled 5%)
2 cups sugar
3 cups brown sugar
3 tablespoons dry mustard
2 teaspoons powdered ginger
1 tablespoon turmeric
4 tablespoons mustard seeds
3 tablespoons celery seed
3 tablespoons pickling spiceInstructions
Chop all vegetables and combine in a large kettle. Stir in salt; let stand overnight. Drain. Combine vinegar, sugars, dry mustard, ginger, and turmeric in a different pot or kettle. Put mustard seed, celery seed, and pickling spices in square of cheesecloth or cheesecloth bag. Tie all the ends together and put into the kettle. Bring to a boil, simmer for about 30 minutes. Add vegetables and return to simmer for 30 minutes longer Find and throw out the cheesecloth bag and spices. Spoon chow-chow into hot sterilized jars and seal. In your boiling water canner, process the jars per the canner instruction for 15 minutes. Adjust the process time to 20 minutes if you are over 1000 feet. Process for 25 minutes for altitudes over 6,000 ft. Put in sterilized jars with approved seals and lids. NOTE: Follow suggestion cook times or instructions for your canner as cooking times may vary for different types of canners.
