Spanish Rice and Chicken RecipeChicken and rice combined with spanish seasonings and cooked in a skillet on the stove top, is a favorite from my mother's kitchen recipes.
Ingredients
1 chicken - cut up (or one package legs or thighs)
1 cup chopped white onion
1 green pepper cut in strips
1 cup Original raw white rice
2 8 oz cans tomato sauce
1 3/4 cups of water
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon chili powderInstructions
Brown the chicken pieces in a large skillet in the oil. Add the onion, green pepper and the rice. Cook lightly. Stir in the remaining ingredients. Cover the skillet and simmer for 35 to 45 minutes until chicken and rice are done.
