Pinto Beans Recipe

A basic pinto bean recipe. Tip: Soaking the rinsed beans overnight in a large pan of water cuts down on the cooking time.

Ingredients

1. A 5 quart cooking pot with lid
2. 2 pound of dried pinto beans
3. 10 to 16 ounces of cooked ham
4. 1 package of baby carrots or 6-8 carrots sliced
5. 1 package dry onion soup mix
6. 2 tablespoons of chili powder
7. 1 tablespoon of Italian Seasoning
8. 1 large onion
9. Salt to taste

Preparation

1. Sort pinto beans into the cooking pot. Wash and drain.
2. Add water to the cooking pot up to about 3/4th full. Cover and soak all night.

Cooking

  • Next day add the package of dry onion soup, chili powder, and Italian Seasoning.
  • Put the pot on medium until it comes to a slow boil.
  • Meantime, chop the onion and add it to the pot.
  • Cut the cooked ham into 1/2 inch cubes (more or less) and add to the bean pot.
  • Once the pot comes to a slow boil, turn the heat down to a slow simmer. Add water to the pot to about 3/4th or more to the top of the pot.
  • Let simmer for about 1 hour. Taste the liquid and add salt to taste. Add baby carrots or the carrot slices and simmer until the pinto beans or soft, about 1 to 2 hours. Stir and check water level every so often.
    • Serve with cornbread and cole slaw salad if desired. This pot of beans will serve a large family. Left over beans may be frozen for up to a week, then heated for another meal.
